Certain things need no gimmick to attract attention, they are inherently appealing to one and all. One such food is the ‘Burrito’. You either like the burrito or you change your taste. Whether you need a pick-up-and-leave meal or you crave an afternoon sumptuous lunch or a late night quick bite, nothing hits the spot like the burrito. One of my favorite fast food chains was Taco-bell, especially when we are on the road. But they got rid of a lot of vegetarian options off their menu. So I decided to recreate their legendary 7-layer burrito which in my opinion is 7 times healthier, 7 times nutritious and 7 times toothsome than Taco-Bell. Well…in your face taco bell.

What is 7 layered burrito?
The name says it all… Its filled with 7 different ingredients!
- Refried Beans
- Cilantro Lime Rice
- Sour Cream
- Guacamole
- Lettuce _ My recipe doesn’t have lettuce as it’s not my most favorite greens. But feel free to add lettuce to your burrito.
- Pico de Gallo
- Three cheese blend
& lastly here are my 7 tips on making a Taco bell 7 layer burrito
- Guacamole – Prepare a fresh batch of guacamole just before you assemble the ingredients into the burrito
- Beans – Use freshly prepared refried beans instead of canned
- Cilantro rice- You can make this ahead of time. Just mix cooked rice with lots of cilantro , lemon juice and salt.
- Piko De Gallo – Freshly prepared salsa – You can adjust the spice accordingly I personally prefer to be a but spicier
- Tortilla – Don’t go for extra large tortillas it can get messy to handle.
- Cheese – Grated pepper Jack or Mexican3 cheese blend
- Grilling – Grilling the burrito makes the tortilla crunchy or you can cook on the pan for about 1-2 minutes to get the golden brown look which gives the extra zing to your taste buds.

Ingredients
For Refried Beans
- 1 Tbsp Olive oil
- 1/2 Cup Cooked black beans Can use canned black beans
- 1/2 Cup Water
- 1/4 Tsp Salt
- 1/2 Tsp Red chilly powder
- 1/4 Tsp Cumin powder
For Piko de gallo
- 2 Tomatoes Diced
- 1 Onion Chopped
- 4 Tbsp Chopped cilantro
- 1/4 slice Lemon juice
- 1 Garlic Minced
- 1/2 Jalapeno Finely chopped
- 1/2 Tsp Cumin powder
- 1/4 Tsp Salt
- 1/4 Tsp Black pepper
For Guacamole
- 2 Avocados
- 1 Tomato Chopped
- 1 Onion Chopped
- 1/2 Tsp Lemon juice
- 1/4 Jalapeno Finely chopped
- 1/4 Tsp Cumin powder
- 1/4 Tsp Salt
- 3 Tbsp Chopped cilantro
For Cilantro rice
- 1 Cup Cooked rice
- 1 Lemon Juice
- 1/2 Cup Chopped cilantro
- 1 Tsp Salt
Rest of the ingredients for burrito
- 4 Tortillas
- 1/4 Cup Grated cheese
- 1/4 Cup Sour cream
Instructions
Make refried beans
- Stir in Beans: Heat the pan with 1 tbsp oil, add cooked black beans with water.
- Add spices: Add red chilly powder, cumin powder and salt.
- Cook: Mix well and cook for about 5 minutes until most of the water evaporates
- Mash: Take a masher and mask the beans to get nice consistency.
- Add lemon juice: Switch off the gas and add lemon juice. Keep it aside.
Make Pico de Gallo
- Mix: Take a bowl, add diced tomatoes, chopped onions, cilantro. Minced garlic, cumin powder, lemon juice, salt and pepper. Mix well and keep it aside.
Make Guacamole
- Cut the avocados: Take the avocados and cut them into half. Take out the seed.
- Scoop the avocados: Scoop out the avocados into a bowl.
- Mash: Using fork mash the avocados
- Add: To this add chopped tomatoes, onion, jalapeño , salt, lemon juice, cumin powder and cilantro.
- Mix: Mix all the ingredients well. Guacamole is ready and keep it aside.
Make Cilantro rice
- Mix: Take 1 cup cooked rice, add lemon juice, chopped cilantro and salt. Mix well and keep it aside
Assemble 7 layer burrito
- Add ingredients on Tortilla : Add a spoonful of refried beans. Cilantro rice, Guacamole, Pico, sour cream, cheese , lettuce (If using)
- Roll it up: Fold the sides of the tortilla on to the stuffing, and roll up the bottom portion of tortilla and tuck it in to secure and work the way up. (Refer the video above)
- Roast: Roast the Burrito on a pan if you like it crunchy.
- Serve: Serve it with hot sauce or salsa.
Notes
- You can add any cooked veggies if you wish to. Some of the option i like is bell peppers and corn.
- You can make this vegan by substituting vegan cheese and vegan sour cream.
